Meatless Mondays- Vegan Egg Substitutes


Eggs are an integral ingredient in baking but if you’re vegan or allergic, there are excellent egg substitutes available.

Eggs take on three roles when baking: Moisture, rise/leavening, and binding. Most egg replacers add moisture and binding, but you’ll need a separate leavening agent like baking powder. Stick to substituting in recipes that call for three eggs or less. More than that, you’ll find that you compromise the integrity of the original recipe.

Tech Thursdays-The Slow, Steady Rise of 5G



The wireless industry began shifting to 5G in 2019—a technology that enables you to download movies in seconds. Rolling out 5G was uneven. Carriers deployed 5G in a few dozen cities, with only several new smartphones implementing the new technology. Bummer.


 

5G gained momentum in 2020. Verizon expects half its subscribers to have access this year. AT&T offers 5G Evolution, incrementally faster than 4G, and 5G Plus, the ultrafast version.
